KORAJE monovarietal Picual early-harvest extra virgin olive oil comes from a single-estate traditional grove in Mancha Real, Jaen, Spain. The fruits are mechanically harvested at the optimum ripeness during mid-October, when most of the fruits are still green, promising intense green fruity aroma and balanced bitterness and spiciness due to antioxidants, such as polyphenols and vitamin E, at their peak.
The only aerially collected fruits are transported to the estate’s own mill within 2 hours and processed immediately at controlled oxygen exposure and low malaxation temperature of <21 °C, ensuring a premium quality first cold-extracted extra virgin olive oil of intense green color.
