Tasting notes

Every note has a molecule behind it.

Olive oil is fruit juice with a complex chemistry. When you feel the pepper at the back of your throat, that is a compound you can measure — and we do.

  • Oleocanthal

    The peppery catch at the back of the throat. The marker of a fresh, high-phenolic oil.

  • Oleuropein & oleacein

    Bitterness. Green fruit, picked early. It fades as the oil ages.

  • cis-3-hexenal

    Cut grass and green leaf on the nose, in the first seconds after pouring.

  • Oleic acid

    Body and smoothness. The monounsaturated fat that makes the oil stable in the pan.

  • α-tocopherol

    Vitamin E. Protects the oil from oxidising, and you along with it.

How it is made

Crafted with precision and responsibility

Traceability

Every bottle carries a batch number an serial number that map back to a grove, a picking date, and a lab result you can read.

Quality

Picked green in October, at the point where polyphenols peak and yield does not. We are a Chemistry-led company, where quality is our first priority.
