Early-harvest olives, collected while still green, naturally contain higher concentrations of polyphenols and produce the intense green-fruity aroma associated with authentic premium extra virgin olive oil.

However, harvesting alone does not guarantee quality. Time is critical. Once olives leave the tree, oxidation and fermentation begin immediately. That is why our olives are transported to the mill within two hours of harvest and cold extracted below 21 °C to preserve freshness, antioxidants, and sensory complexity.
