Why is high oleic acid good?
Oleic acid, being a monounsaturated fatty acid, is heart-healthy, and at the same time, it is more resistant to thermal (heat) and photo (light) oxidation in contrast to polyunsaturated fatty acids.
The fewer the number of double bonds higher the stability against oxidation.
Oxidative stability of oil is important because oxidation leads to-
- Unpleasant odors and flavors
- Loss of freshness and shortens oil life
- Formation of harmful degradation products
Higher oxidative resistance makes olive oil an excellent cooking oil option.
