What is the difference between olive oil and extra virgin olive oil?

Olive oil in day-to-day conversation is just a generic or umbrella term that represents olive oil regardless of the grades and quality.

On the other hand, extra virgin olive oil is the olive oil of the highest quality produced from high-quality, healthy fruits by only physical process following appropriate processing protocols that do not alter the oil chemistry. Extra virgin olive oil, ideally, is a single extract and does not contain any low-grade olive oil added. It is fresh and has an excellent aroma and flavor.

Technically, the oil that is labeled as “Olive Oil” is a blend of refined olive oil, which is derived from a Lampante oil, both are not fit for human consumption, and 5-15% of virgin olive oil. The virgin olive oil is added to get an acceptable aroma and flavor.
