What is a premium olive oil?

A premium olive oil is the highest quality extra virgin olive oil that has exceptional physico-chemical and sensory profiles meeting strict quality standards. They are usually produced by adopting good olive oil production practices and are traceable.

  • Chemically, they have low acidity, < 0.3%, as compared to 0.8% assigned to extra virgin olive oil, that guarantee freshness.
  • They have an excellent and complex organoleptic profile with a strong fruity/ green with a marked bitter and spicy kick.
  • A premium oil is made from high-quality selected olive fruits using a cold extraction technique (below 27 °C).
  • The time between the harvest and the processing/ milling is hours that preserve good chemicals responsible for flavor and health benefits.
  • They usually come from a specified single geographical origin, are not blended, bear a harvest date, and might bear certification by PDO or PGI.
  • Usually, premium olive oils come with a harvest date and are packaged in a high-quality dark glass bottle or equivalent that protects from light degradation, and there is no leaching of harmful chemicals from the container to the oil.
