It is not a hyperbole to say that olive oil (EVOO to be precise) is the healthiest fat. Its health benefits come from-
- Olive oil has monounsaturated oleic acid as the main fatty acid component. It is heart-healthy and helps prevent cardiovascular diseases (CVD).
- It has a very low amount of saturated, trans-, and polyunsaturated fatty acids
- MUFA has the highest oxidative resistance among any unsaturated oils, and it prevents the oxidation of the oil during cooking, which leads to the formation of health-harming free radicals or reactive oxygen species.
- Polyphenols, which are antioxidants, anti inflammatory, and anti-cancerous, etc., are exclusively present in olive oil. These bioactive compounds prevent numerous metabolic diseases, such as obesity, diabetes, arthritis, cancer, CVD, etc.
- Olive oil has other antioxidants and provitamins, such as vitamin E (tocopherols), squalene, and beta carotene, that are beneficial for health.
