Should extra virgin olive oil be refrigerated?

Despite the popular belief, the refrigeration of EVOO is not recommended. 

EVOO is a mixture of 200+ compounds having broad volatility and freezing points. 

Refrigeration freezes the major fraction, triglycerides, TAGs, while volatiles and polar compounds are less affected. 

This can disturb the homogeneity of the oil. 

Once frozen, the oil may not come into the original state even after melting at room temperature.

So, to prevent the compromise in the quality, the refrigeration of extra virgin olive oil should be avoided.
