Can you use olive oil for cooking?

Many people think that olive oil is not a good option for cooking due to its low smoke point, but the reality is different.

A high polyphenol-containing olive oil, such as Spanish Picual, has a greater oxidative and thermal stability. For that reason, olive oil is a great option for cooking and frying. 

Although fatty acids and minor compounds in EVOO undergo thermal degradation during cooking, due to high MUFA and polyphenol contents, EVOO is by far the best cooking oil compared to common edible oils used in cooking. 

However, a lower heating temperature below 180 °C is recommended for the best result.
