Can you fry with olive oil?

Can you fry with olive oil? In short, yes, but with a caveat.

Due to the low smoke point of olive oil (~205 °C), it was not recommended for cooking and frying in the past.

However, recent studies have shown that smoke point is not an accurate indicator of oil thermal performance and stability. 

EVOO is hence used as a good frying oil thanks to its high MUFA, low PUFA, and its antioxidant contents, such as polyphenols that provide protective action against thermal degradation during cooking.
